Butter Chicken Sauce History:
This curry dish originated in the 1950’s in Delhi, India and was made "by chance" by the famous restaurateur, Kundan Lal Gujral, by mixing leftover tandoori chicken into a tomato-based sauce.
In 1975, the English phrase "butter chicken" curry first appeared in print.
Butter chicken dishes, traditionally known as murgh makhani, are made with either whole spices, ground spices, or a mix of both.
Butter Chicken Sauce Flavor Profile:
Butter chicken is known for its rich texture and is similar to chicken tikka masala, which also uses a tomato paste.

A key spice used in butter chicken sauce is garam masala. Garam Masala is a blend of a variety of spices, each contributing its unique flavor and aroma. The exact composition can vary, but it often includes ingredients like cinnamon, cardamom, cloves, cumin, coriander, black pepper, dill and nutmeg.
Butter Chicken Sauce Flavor Enhancing Tips:
Sauteed onion, fresh ginger and fresh garlic add extra fragrance and flavor to this sauce.
Using tomato paste puree helps to provide uniform taste, tang and smoothness.

Butter Chicken Recipe
Butter Chicken “Sauce” Ingredients:
1 fresh tomato or 4 tbsp tomato sauce
½ red onion (chopped roughly)
2 cups hot broth (chicken or veggie)
2 tbsp refined coconut oil
1 pkg Butter Chicken Spice Blend (sauce)
pinch of salt (pink or sea salt)
2 tbsp butter
1 tbsp local honey
Butter Chicken “Marinade” Ingredients:
1 cup cooked (cooled) chicken (diced) or paneer
1 cup Greek yogurt (full fat works best)
salt to taste (pink or sea salt)
1 pkg Butter Chicken Spice Blend (marinade)
2 tbsp fresh garlic (finely chopped)
2 tbsp ginger (finely chopped)
Directions:
Place “marinade” packet in a bowl with yogurt, salt and set aside.
Add coconut oil, 1 tbsp butter, onion , salt, (optional* add pinch of chili flakes for heat) cook until onions soften, and tomato, garlic & ginger cook down.
Add “sauce” packet to pan with onions mix, add heated broth (can use water in a pinch!) stir.
Once sauce is simmering use an immersion blender to blitz the mixture until smooth.
Temper yogurt by adding a ladle full of hot tomato mix to yogurt and stir (add about 3 ladles, one at at time) then add remaining yogurt to hot pan and stir until it mixes together and becomes smooth (careful not to let it boil).
Add cooked (cooled) chicken or paneer and heat until hot.
Add 1 tbsp butter and 1 tbsp local honey (or brown sugar).
Stir and enjoy!
