Classic Creamy Coleslaw

A quick and easy coleslaw recipe without the added grocery store cost.  Made with locally sourced vegetables makes it taste even better!

Coleslaw, made primarily from cabbage and other fresh vegetables, offers numerous health benefits. Cabbage is rich in vitamins C and K, which support immune function and bone health, respectively. The fibre content in coleslaw promotes digestive health and helps regulate blood sugar levels. Carrots, often included in coleslaw, are an excellent source of beta-carotene, supporting eye health and boosting antioxidant protection.

Making homemade coleslaw is significantly more cost-effective than purchasing it pre-made at the store. When preparing coleslaw at home, the primary ingredients—cabbage, carrots, and a simple dressing made from mayonnaise, vinegar, sugar, and seasoning—can be sourced locally and seasonally, reducing costs and supporting sustainable practices. For example, a medium cabbage costing approximately $3, a couple of carrots for about $1, and pantry staples for the dressing might total around $5.00 to make multiple servings. In contrast, a single store-bought container of coleslaw often ranges from $7.00 to $9.00, offering fewer servings and including packaging expenses. By making it yourself, you not only save money but also lessen your carbon footprint by choosing fresh, local ingredients and minimizing waste.

Preparing dishes ahead of time is a simple way to save both money and stress during busy days. By making this dish ahead of time, you can quickly assemble lunches or side dishes throughout the week.
